Vegetable Lo Mein


¼ cup soy sauce

1 tbsp sugar

½ tsp salt, or to taste

2 tsp cornstarch

2 tsp sesame oil

1 tsp black pepper

½ tbsp vegetable oil

1 tbsp ginger, julienne

1 tbsp garlic, minced

¼ onion, sliced

¼ cup carrot, julienne

¼ cup red bell pepper, julienne

¼ cup snow peas

2 tbsp green onion

8 oz. lo Mein noodles


  1. To small bowl, add soy sauce, sugar, salt, cornstarch, sesame oil, and pepper. Mix well and set aside

  2. Prepare Lo Mein noodles as directed on package. Rinse with cold water and keep aside

  3. To large pan, heat oil. Add ginger and garlic and sauté until fragrant

  4. Toss in onion, carrot, red bell pepper, snow peas, and green onion

  5. Sauté vegetables for 3-4 minutes. You want to cook them, but do not allow them to get soggy

  6. Pour in sauce and mix. Cover and cook additional 1-2 minutes

  7. Add in cooked Lo Mein noodles and mix well to get everything well incorporated

  8. Garnish with green onions
