Sausage and Potatoes


Ingredients

¼ cup vegetable oil

2 large potatoes*

2 tsp salt, or to taste

1 tsp black pepper

1 onion, sliced

5 cloves garlic, minced

1-2 cups sausage


Directions

  1. Heat oil in pan over medium. Once hot add in potatoes. I like to cut mine in to quarters length wise, then slice thin. Also add in salt and pepper. Give it all a good stir, then leave alone and allow to cook for 5 minutes. Then, give another good stir, and again leave alone for 5 minutes

  2. Add in the onion and garlic. Keep cooking another 10-15 minutes, or until onions have cooked and potatoes are tender and a little crispy. You can cook longer if you prefer crispier potatoes!

  3. Towards the end, add in 1-2 cups of cooked sausage depending how much you like. My favorite is the Eckrich smoked sausage!

  4. This makes a great breakfast dish along side some eggs. Sometimes I’ll even just break my eggs into this dish like a hash.
