Peanut Butter Cookies
Ingredients
½ c. butter, room temp.
½ c. granulated sugar
½ c. brown sugar, packed
½ c. peanut butter
½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 egg
1 ¼ c. all-purpose flour
Directions
To bowl, add butter, both sugars, and peanut butter (I used creamy, but crunchy works too). Mix until everything is creamed together
Sprinkle in baking powder, baking soda, and salt. Mix well
Add egg, and again mix
Carefully add flour. Start mixing slowly to avoid flour from going everywhere. Mix until everything is well combined and dough forms
Cover dough with cling wrap and refrigerate 2-3 hours, or until dough is firm
Scoop out tbsp amounts of dough and roll into balls. Place about 2 inches apart on parchment lined cookie sheet
Use a fork to create criss-cross pattern on cookies to give them that iconic peanut butter cookie look
Bake at 375 F for 10-12 minutes
