Oatmeal Raisin Cookies
Ingredients
1 ½ cup flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
3 cups old fashioned oats
1 cup butter, room temp.
½ cup granulated sugar
1 cup brown sugar, packed
2 eggs
1 tsp vanilla
1 cup raisins
Directions
To large bowl, add flour, baking soda, cinnamon, salt, and oats. Whisk until ingredients are combined. Set aside
In another bowl, cream together butter and both sugars. Add eggs and vanilla. Continue mixing until combined
In batches, mix in dry ingredients until everything is well incorporated
Use spatula to fold raisins into dough
Drop 2 tbsp amounts of dough onto parchment lined cookie tray. Use fingers to press cookies down. Cookies will spread so place them about 2” apart
Baking in 350 F preheated oven for 10-12 minutes, or until golden around the edges
