Oatmeal Chocolate Chip Lactation Cookies


Ingredients

¼ cup water

2 tbsp ground flax seeds

2 cups flour

1 tsp baking soda

1 tsp salt

4 tbsp brewer’s yeast

1 cup butter, room temp.

1 cup granulated sugar

1 cup brown sugar, packed

2 eggs

1 tsp vanilla

3 cups old-fashioned oats

1 ½ cup semi-sweet chocolate chips

Directions

  1. Add flax seeds to water. Set aside and let soak at least 5 minutes

  2. To large bowl, add flour, baking soda, salt, and brewer’s yeast. Mix well and set aside

  3. To another large bowl, add butter and both sugars. Use a stand or hand mixer to mix together. Add in the eggs, vanilla, and flax seeds. Mix well

  4. Add the dry ingredients to wet, and slowly mix until combined. Pour in the oats and chocolate chips. Mix until everything is well combined. This dough is quite thick, so you may need to switch to using a spatula

  5. Scoop dough in 1 tbsp amounts onto parchment lined cookie sheet, about 2 inches apart

  6. Bake at 350 F for 10-12 minutes, or until edges are golden
