Lemon Brownies
Ingredients
BROWNIES
2/3 cup butter, room temperature
1 cup granulated sugar
2 eggs
½ tsp salt
4 tbsp fresh lemon juice
Zest of 2 lemons
1 ¼ cup all-purpose flour
GLAZE
1 cup powdered sugar
2-3 tbsp fresh lemon juice
Zest of 1 lemon
Directions
To large bowl, cream together butter and sugar. Then slowly add the eggs and mix together
Add in salt, lemon juice, and lemon zest. Mix
Pour in flour. Mix until just combined. Over mixing will result in tough brownies
Pour into 8x8 baking sheet and smooth out
Bake at 350 F for 22-25 minutes, or until toothpick inserted in the middle comes out clean. Allow to cool completely
For the glaze, mix together powdered sugar, lemon juice, and lemon zest. If glaze is too thin, add more powdered sugar. If too thick, add a little more lemon juice.
Pour glaze over brownies and smooth out. Let sit until glaze dries
