Homemade Yogurt Recipe (Dahi)


Ingredients

2.5 quarts of whole or 2% milk

¼ cup plain yogurt


Directions

  1. Pour milk into a heavy bottomed pot and bring to boil over medium heat (stir constantly!)

  2. Once milk boils, immediately remove from heat and pour into a container that has a lid

  3. Allow milk to cool until just warm to the touch

  4. Mix in plain yogurt

  5. Place lid and set container in a warm place for 5-7 hours (I place mine in the oven with the oven light on)

  6. After 5 hours, check to see if yogurt has set, if not leave for another hour and check again. Repeat if necessary

  7. Once set, store in refrigerator for up to a week

  8. Set aside ¼ cup yogurt for the next batch

**You will have to purchase pre-made yogurt for the very first batch. Try to avoid Greek yogurt. Look for plain yogurt where the only ingredients are “milk” and “live cultures”

**Yogurt can be strained through a cheesecloth to produce a thicker yogurt, similar to Greek yogurt
