Funfetti Pancakes


1 ½ cup all-purpose flour

2 tsp baking powder

Pinch of salt

1 tbsp sugar

½ cup boxed white cake mix

1 tsp vanilla

1 egg

1 ½ cup milk

3 tbsp butter, melted

3 tbsp rainbow sprinkles


  1. Mix together all dry ingredients; flour, baking powder, salt, sugar, and boxed cake mix. Set aside

  2. To another bowl mix wet ingredients; vanilla, egg, milk, and butter

  3. Carefully add the dry ingredients to the wet and mix until well combined. Fold in rainbow sprinkles. Be careful not to over mix

  4. Heat a griddle or pan over medium. Spray with cooking spray or brush with oil. Pour ¼ cup amounts of batter onto hot pan

  5. Let pancakes cook until bubbles start forming all over the top of the pancake, about 3-4 minutes

  6. Once bubbles have appeared, carefully flip pancakes over and allow them to cook another 1-2 minutes, or until golden on both sides
