Chocolate Chocolate Chip Muffins


2 cups flour

¾ cup unsweetened cocoa powder

2 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 ¼ cup sugar

2 eggs

1 cup milk

¼ cup oil

¼ cup butter, melted

1 tsp vanilla

2 tsp instant coffee

1 cup chocolate chips


  1. To bowl, add flour, cocoa powder, baking soda, baking powder, salt, and sugar. Whisk until everything is well combined. Set aside

  2. To a different large bowl, add eggs, milk, oil, butter, vanilla, and instant coffee. Whisk

  3. Add half the dry ingredients to the wet and mix until mostly combined, then add the other half. Use spatula to mix until everything is well incorporated

  4. Fold chocolate chips into the batter

  5. Grease muffin pan. Fill each hole almost to the top. Spraying your spoon or scoop with oil helps make it a little easier

  6. Bake at 425 F for 3 minutes, then lower the heat to 350 F and continue baking 15-17 minutes, or until a toothpick entered into the center of a muffin comes out clean
