Chocolate Chip Pumpkin Bread


Ingredients

3 ½ c. all-purpose flour

1 ½ tsp salt

2 tsp baking soda

2 tbsp pumpkin pie spice

1 (15 oz) can pumpkin puree

4 eggs

1 c. vegetable oil

2/3 c. water

2 tsp vanilla extract

2 ½ c. sugar

1 c. chocolate chips

Directions

  1. Preheat oven to 350 F

  2. In medium bowl, mix flour, salt, baking soda, and pumpkin pie spice. Whisk everything together well and set aside

  3. In another bowl, mix pumpkin (do not use canned pumpkin pie mix, just the plain stuff), eggs, oil, water, vanilla, and sugar. Whisk everything together

  4. Add half of the dry ingredients to the wet and mix well. Add other half and keep mixing until everything is well incorporated

  5. Fold in chocolate chips

  6. Grease 3 loaf pans. Equally divide the batter between the three pans

  7. Bake for 60-70 minutes, or until toothpick comes out clean

  8. Extra loaves can be frozen for later time. To thaw, simply set out on counter the night before
