Baked Blueberry Oatmeal


½ cup brown sugar

¼ cup butter, melted

1 ½ tsp baking powder

¼ tsp salt

1 tsp cinnamon

2 tsp vanilla extract

1 ½ cups milk

2 eggs

3 cups old-fashioned oats

1 cup fresh blueberries


  1. To large bowl, whisk together brown sugar, butter, baking powder, salt, cinnamon, and vanilla. Once combined, pour in the milk and add the eggs. Mix until everything is well incorporated

  2. Now add the oats and blueberries. Give a good mix

  3. Pour oat mixture into well greased 8x8 baking dish. Use a spatula to smooth out

  4. Bake at 350 F for 35-40 min, or until nice and golden on top

*This dish is perfect for making ahead of time. You can combined all the ingredients and store in the fridge to bake the next morning, or you can bake it and just reheat in the microwave!
