Avocado Baked with Egg
Ingredients
1 large avocado
2 eggs
Salt, to taste
Pepper, to taste
Toppings of choice
Bacon
Chives
Hot sauce
Onion
Directions
Preheat oven to 425 F
Cut ripe avocado in half and carefully remove the pit
Using a spoon, carefully remove some of the avocado around the pit hole, to make more room for the egg
Break an egg into each avocado half and season with salt and pepper
Bake for 15-20 minutes depending on how runny you prefer your egg yolks
Top with your favorite toppings. Enjoy as is, or spread over some toast!
